The Italian is guest Starring - Recipe


for 1 person

60 g of spelt pasta or normal pasta
1.5 l of water 5 g of salt
25 g of apple and elderflower green tea
1 small diced shallot
4 cherry tomatoes
a pinch of cinnamon

Bring the water to boil add the tea and 1 minute later add the pasta and cook until it becomes al dente.
in mean time put olive oil in a frying pan and sweat down the shallot until it gets a bit of colour.
Add the cherry tomatoes and fry for a bit, then add some of the water that you are using to cook the pasta, reduce down and add the pasta.
Stir until the sauce is mixed with the pasta and not runny anymore, add the Cinnamon and a tiny, tiny of paprika to give acidity.
Remember one thing when you cook, you are using salt for give flavour to the food, and acidity to rice up the flavour. Thats a good tip from the Italian;)
